Adobeによると、Adobe製アプリは以下のバージョンでmacOS 27 Golden Gateとの互換性が確認できたそうですが、Acrobat DCに関しては現在[アップデートの確認]ダイアログのボタンが、マウスやトラックパッドのクリックに反応しない不具合が確認されているため、その場合は、キーボードを使用してダイアログを操作し、Tab キーを押してオプション間を移動し、[Return]キーまたは[Space]キーを押して実行して欲しいとコメントされています。
The buttons in the Check for Updates dialog in Acrobat may not respond to mouse or trackpad clicks. As a workaround, use your keyboard to interact with the dialog. Press Tab to move between the options, then press Return or Space to select the highlighted one.

なお、Adobe製アプリとmacOS 27 Golden Gateとの問題ではありませんが、Wacom製タブレットドライバの不具合により、古いWacom製タブレットドライバがインストールされているとIllustratorなどのアプリが起動しない問題[1, 2]が確認されているので注意して下さい。
